Healthy Holiday Cookie Recipe

With all of the delicious treats available during the holiday season it can be hard to find a snack that is actually good for you and one that will keep you from tipping the scales. Take a look at this healthy holiday cookie recipe and see how easy it can be to whip up a tasty party treat.

Gingerbread Sparkle Cookies

Ingredients:

2 cups white whole-wheat flour

2 teaspoons ground ginger

2 teaspoons cinnamon

2 teaspoons ground cinnamon

1/4 teaspoon ground allspice

1 teaspoon baking soda

1/4 teaspoon salt

1 cup tightly packed brown sugar

1 large egg

1/4 cup unsweetened apple sauce

1/4 cup molasses

2 tablespoons colored sugar sprinkles

Preparation:

In a small mixing bowl whisk flour, ginger, cinnamon, allspice, baking soda and salt. In a larger mixing bowl beat egg and brown sugar on medium-high speed until smooth and light. Slowly add apple sauce and molasses and beat for an additional 3 minutes. Scrape down sides of bowl. On a low speed gradually add flour mixture until just incorporated. Transfer mixture to a clean bowl. Cover mixture and refrigerate until firm, at least 2 hours or overnight.

Baking:

Place oven racks on top and bottom thirds of oven. Pre-heat oven to 350° F. Line 4 large baking sheets with parchment paper.

Using a 1 inch cookie scoop or spoon, line dough on parchment leaving a 2 inch space between each cookie. Sprinkle sugar sparkles over the top of each cookie. Bake, switching each sheet halfway through, for a total of 12 minutes. Cool cookies on wire racks. Repeat with your remaining dough and sugar sprinkles.
